Nothing is quite as American as apple pie, and it’s also one of U.S. food blogger Caitlin’s favorites. That’s why she wants to enjoy every last bit of a tasty weekend indulgence. But what if there isn’t enough left over? That’s when Caitlin pulls out an ingenious recipe and transforms her apple pie into another American classic: pancakes. Add pecans, cinnamon, and maple syrup, and voilà – Caitlin’s delicious apple pie pancakes are ready!

Caitlin’s recipe for weekend leftovers

Apple pie pancakes

Ingredients (for two people): 1/4–1/2 leftover apple pie, 1 cup flour, 2 tbsp. sugar, 1 1/4 tsp. baking powder, 1/4 tsp. baking soda, 1 pinch salt, 1 cup buttermilk, 1 egg, 1 1/2 tbsp. melted butter, 1 dash vanilla

Sauce: 2 cinnamon sticks, 1/2 cup pecans, 1 cup maple syrup

Preparation:

1. Add flour, sugar, baking powder, baking soda, and salt into a mixing bowl and blend.

2. Whisk the buttermilk, egg, melted butter, and vanilla in a separate bowl.

3. Add a good spoonful of chopped-up apple pie to a greased frying pan. Then pour some pancake mix over the apple pie and let it cook until the bottom of the pancake is slightly caramelized.

4. Turn the pancake and fry it until both sides are golden brown.

5. While the pancakes are frying, add the cinnamon sticks and pecans into a small saucepan and slightly roast them until they give off a pleasant aroma. Then add the maple syrup and let the mixture simmer.

Now drizzle the warm syrup over the pancakes and enjoy!
